Gingerbread Men & Icing Fail! || Blogmas Day 9


Hello everyone!!!
 
Every year at Christmas time I do Christmas baking for my family and friends. One of the things that I really enjoy baking is Gingerbread men! This year for my blog I thought that I would ice them which is something that I don’t usually do.

Firstly, here is the recipe for Gingerbread men.

You will need:
125g butter
75g dark muscovado sugar
1 egg lightly beaten
100ml golden syrup
375g plain flour
½ tsp baking powder
1 tsp bicarbonate of soda
3 tsp ground ginger
½ tsp ground mixed spice

Beat the butter and sugar together until combined. Add the egg and golden syrup, beat until smooth. Add all of the other ingredients and mix until combined into a dough. Roll out on a floured surface about 3mm thick. Cut out shapes and bake for 10-12 minutes or until golden brown around the edges.




I used wheat-free flour in my recipe, if you use wheat-free flour you will find that the dough is really sticky and you will need to add more flour. Putting the dough in the fridge for an hour before rolling out will also make it easier.

So I made a huge batch of Gingerbread men and when they were cooled I chose the best looking ones to ice!!
Then I realised I didn’t have much icing sugar, and I couldn’t go to the shop because it was late and I was already in my pjs.

I followed the instructions on the packet to make royal icing and used a piping bag to decorate the biscuits. They might not look that pretty but they tasted amazing!!!
